Fresh Quartirolo cheese is a soft cheese from Lombardy with a raw paste, made from whole or semi-skimmed cow’s milk. This cheese used to be made from the milk of cows which fed on the so-called “quartirola” grass, i.e. the last mow before winter. That’s how this cheese got its name.
PDO Quartirolo lombardo cheese is a very ancient and outstanding cheese. According to Lombard tradition, it was produced at the end of the summer transhumance, but nowadays it is made all year round.
Fresh Quartirolo cheese by CasArrigoni has a short ripening period and the Quartirolo cheese paste is crumbly, slightly lumpy, white and with no rind. It has a very intense flavour of milk, which is a common feature of fresh cheeses. It also has a slightly sour note.
