Canestrato di Moliterno is a hard pecorino cheese made from the whole milk of goats and sheep, reared in a wild state. Where does this cheese get its name? Why do we say that this cheese has ‘a tear’? It is called ‘Canestrato’ (i.e. put into baskets), because it is left to age in specific reed baskets which leave a mark on the rind. By “tear” we mean that tiny drop of fat dripping down as the cheese is being cut.

Canestrato di Moliterno pecorino cheese’s flavour has an interesting spicy note which gets more distinctive as ripening progresses. When it reaches a good maturation point, this cheese is ideal as grate cheese to kick pasta dishes with a meat-based sauce or soups up a notch, whereas the fresh Canestrato pecorino is ideal as table cheese.
