The sweet-and-sour, white dressing by Officinae Defrutum is made from Trebbiano grape must and white vinegar. It should not be mixed up with traditional white wine vinegar, since this dressing has distinct aromatic notes of grape must.
It is a bright, opaque, golden yellow liquid with specific and intense sweet-and-sour notes, as well as the distinctive fruity flavour of grape.
This dressing ages for 3 years and is definitely more delicate than traditional vinegar and brown glazes. The sweet-and-sour white dressing is good to marinate, to dress salads and vegetables, in a vinaigrette sauce or drizzled on seafood.
