The Cinta Senese pork ragout with Aglione garlic is a truly extraordinary sauce. Cinta Senese is an ancient and rustic swine breed that is characterised by a refined and flavourful meat thanks to the high content of intramuscular fat. To make this ragout, the meat is cooked very slowly on a mirepoix base, which allows obtaining an incredible taste and consistency. Red wine and tomato pulp are added and left to simmer. Finally, the Aglione garlic adds the final touch, making this sauce even more delicious.
