We don’t know much about the origins of Sieve wheat, but we know it is one of the ancient grain varieties which have been cultivated for more than half a century in mountainous areas all over Italy, especially in Tuscany. Since it is an ancient wheat flour (like Verna flour), it has a very low gluten content and it is much easier to digest.

Sieve ancient wheat flour is ideal to make bread, especially Tuscan unsalted bread; the wheat sensory features give the bread incredible flavours and scents. Foreign wheat varieties - often used to make all sorts of bakery products - are very high in gluten and as a result, they create very compact doughs. On the contrary, bread made from ancient grains has a completely different structure.
