Carozzi makes PDO Taleggio cheese supplied by small farms located in Lombardy, where this cheese is originally from. This cheese traditional production is deeply tied to the territory.

The Taleggio cheese is a soft cheese with a creamy paste: the softer the paste, the sweeter the flavour. It is made from very fresh milk; it is salted by hand and aged in pinewood cases for at least two months.
