The rigorous manufacturing process of this company follows strict requirements, such as using 60% of the company’s own milk, working with long-term reliable suppliers, monitoring the entire supply chain and much more. All manufacturing processes are performed by hand and cheese ripening is a slow process, which sometimes takes even more than 72 months! This company’s passion and hard work lead to the production of a top quality foodstuff, sold everywhere in the world. Parmigiano Reggiano cheese is a product deeply rooted in history, tradition and culture, whose production requires dedication, passion and patience: these values should be passed down from one generation to the next and who better than the Gennari family to do it?

Caseificio Gennari was founded in 1953 in Collecchio by Sergio and Maria Gennari. Initially the company used to produce 3 cheese wheels per day. in 1974 the company moved headquarters and production amounted to 12 cheese wheels per day. Afterwards, with the expansion and modernisation of premises, including technological developments, company production reached as many as 40 cheese wheels per day. The company evolution gradually intertwined with the story of the Gennari family itself. As production rose, the family expanded, too. the children now also work at the cheese factory. Nowadays Gennari owns a warehouse containing roughly 35,000 cheese wheels and a modern farm for milk production.

This family company aims at producing cheese in a completely natural way and fully respecting the environment. For the past thirty years the company has also been raising more than 1,000 head of cattle that supply 60% of the milk processed by Gennari. By doing so, the entire manufacturing process, from the fields to the end product, is local and can be easily traced. Moreover, given its characteristics and values, Gennari has subscribed to Slow Food philosophy: “good, clean and fair food”.
