Opera Waiting – 100% Nature is a confectionery workshop located in San Gimignano, Tuscany, born out of the passion of three friends - Elisa, Gabriele and Gianluca - for handmade pastry. Opera Waiting’s philosophy is making baked products by using only natural ingredients - preferably organic or produced with full respect for the environment and strictly focusing on quality.

Their flagship products are handmade Panettone, made by hand as tradition dictates, but with several creative recipes. Alongside the classic traditional Panettone, they came up with interesting flavour combinations, such as Panettone with gianduja, rum, coffee and much more.

Their secret lies in the natural sourdough leavening which give Opera Waiting’s Panettone a great fluffiness and a perfect alveolar structure. It is no coincidence that these Panettone cakes are amongst the best Italian Panettone, even though they are not from Milan! Ancient grain flour, Italian honey, candied fruit are the ingredients of truly perfect products.

Opera Waiting is an actual workshop, a place where ideas never stop popping up and people never stop experimenting, although this brand is still deeply rooted in the confectionery and Tuscan agricultural tradition.
