Natural balsamic vinegar

Officinae Defrutum is a vinegar cellar located in Magreta, in the province of Modena, where the balsamic vinegar of Modena is produced in different variations, but always with the real and unique taste of the so-called “black oil”. 

Both the PGI balsamic vinegar of Modena and the PDO traditional balsamic vinegar of Modena age in unique barrels which are built according to tradition from chestnut, cherry, juniper, ash and durmast wood. It is inside these barrels in the vinegar cellar that the Officinae Defrutum’s outstanding vinegar develops its aromas.

The real balsamic vinegar is only made from cooked grape must and, in the case of PGI balsamic vinegar of Modena, wine vinegar, too. Nothing else. This shiny and syrup-like brown liquid is all natural. As a matter of fact, according to the original recipe, the use of colouring agents or artificial aromas is forbidden. 

The flavour of Officinae Defrutum’s balsamic vinegar is authentic and pure with a bouquet of aromas including mixed berries, vanilla as well as a spicy note - that’s how real and natural balsamic vinegar should taste.

Such a high-quality product requires time, skills and outstanding raw materials. It is, however, the aging time, which can reach 25 years for some vinegar types, which makes the difference and makes the flavour of Defrutum’s balsamic vinegar stand out.
