Fatback – lardo - is a unique pleasure, an authentic sensory experience. The soft veins of red meat on the white of the fat are simply mouth watering. And what about the scent? Unlike fresh lard, cured fatback is compact and less melting. It is perfect as it is, but try to add a few cubes to broths, soups and sauces, you will feel a real explosion of taste. All of Grigio del Casentino’s products are healthy, genuine, authentic and sustainable. The pigs, which are slaughtered when they’re at least 14 months old, live in the semi-wild state in the woods of Casentino, where they feed on what nature offers. The preparations follow the ancient recipes, without preservatives, dyes, nitrites, nitrates, artificial flavours or thickeners.
