Fatback – lardo - is a unique pleasure, an authentic sensory experience. The soft veins of red meat on the white of the fat are simply mouth watering. And what about the scent? With seasoning, the meat and aromatic herbs’ aroma is concentrated in each slice. When tasted, you can enjoy the Grey Pork meat’s flavour, an animal grown in the woods that was fed with nature.
Unlike fresh lard, cured fatback is compact and less melting. It is perfect as it is, but try to add a few cubes to broths, soups and sauces, you will feel a real explosion of taste. All of Grigio del Casentino’s products are healthy, genuine, authentic and sustainable. The pigs, which are slaughtered when they’re at least 14 months old, live in the semi-wild state in the woods of Casentino, where they feed on what nature offers.
