Bucatini Pasta from Gragnano PGI, bronze-drawn - 500g Pastificio dei Campi

Bucatini is a type of pasta shaped like thick spaghetti. Do you know the difference between bucatini and spaghetti? Bucatini are thicker and have a hollow centre, where they can perfectly capture the sauce. Although bucatini are thicker, cooking times of bucatini and spaghetti are more or less the same; that’s because the water, by going through the bucatini hollow centre, cooks them rather quickly. Bucatini are particularly loved in the Lazio region, where they are served with traditional local sauces, such as amatriciana, carbonara and the legendary ‘cacio e pepe’ (cheese and pepper).

The company ‘Pastificio dei Campi’ makes bucatini from durum-wheat semolina. The pasta is then extruded through bronze dies; this technique allows for a rough pasta surface which best holds onto sauces. This company is located in Gragnano, in the region of Campania, which has been an ideal location for pasta production since the 16th century thanks to its mild and slightly humid climate. Gragnano obtained in 2013 the protected geographical indication (PGI) certification which guarantees the excellent quality of local products.

‘Pastificio dei Campi’ protects the environment as well as the territory, because they are both paramount for the production of high-quality pasta. That’s why the company implemented a large-scale soil revitalisation in its fields located in Apulia in order to restore soil balance, thus choosing quality over quantity. Moreover, they use recyclable materials for pasta packaging, such as cardboard cases, to minimize the environmental impact of their products.
