Winner of a gold medal in the World Cheese Awards of 2017-2018 in London, the “Croccolo” Pecorino cheese by De Magi’s name recalls the strong scents of cypresses. The name “Croccolo” refers to “coccola”, the Italian word for cypress cones, whose hard and resinous texture is similar to that of the cheese.
It is a cheese that is refined the old-fashioned way: it matures for an extended period of time in caves in conditions of natural temperature and humidity, like it was done back in the day. That’s how its rind becomes so hard.
It has an intense, slightly spicy and very flavourful taste. It is a versatile cheese: it tastes amazing as a starter, at the end of a meal or it can be, like its refiner likes to define it, a “meditation cheese”. Try to sprinkle some “Croccolo” cheese shavings on your carpaccio meat or use it to obtain the perfect creamy texture in your pasta or risotto dishes.
