PDO traditional balsamic vinegar of Modena is a top-rated product that is only made from acetified cooked grape must. In compliance with product specifications, the vinegar is aged in durmast, chestnut, cherry, ash, mulberry or juniper wooden barrels in Officinae Defrutum’s vinegar cellar.
PDO traditional balsamic vinegar of Modena ages for at least 12 years. During the aging period, it is gradually poured from bigger barrels into smaller ones. As it is poured over and over again, the liquid becomes more concentrated and aromatic through a natural fermentation and evaporation process.
This traditional balsamic vinegar has a nice creamy texture. It has a persistent scent and a pleasant sweet-and-sour flavour with no bitter notes. It is ideal drizzled on salads, on cooked vegetables, with eggs, cheese and with its most famous partner - strawberries.
