Colombara estate is devoted to a special type of aging. The rice grains, kept in silos with a controlled temperature of 15°C, age for seven long years, allowing the starch they contain to become perfectly stable. The result is a type of rice suitable for the most demanding palates, a one-of-a-kind excellent culinary product selected by the most prestigious starred chefs.
A unique and patented process allows the re-absorption of the germ into the grain, thus enabling the Acquerello rice aged 7 years to preserve all the
nutritional properties of whole-grain rice, while offering at the same time the sensory qualities of white rice.
How long does the Acquerello rice 7 years take to cook? It takes only 10 minutes, and then needs 5/6 minutes to rest. Per 500g of rice you need 1.5l of boiling water or broth.
