

Capocollo – also called Scamerita in Tuscany – is the pork cut for true foodies! It is rustic, flavourful, with a great marbling that melts when it is cooked and makes the meat extremely tender.
It is cut into thick slices that are ideal to be grilled on the barbecue. They can also be seared in a pan and cut into dices to make an out-of-this-world stew. The most important thing is to avoid overcooking it; the meat features are best enhanced, whenever it is still pink in the middle.
As is often the case, the most flavourful cuts are not the most refined ones. It is also true that Casentino grey pork guarantees top quality. It is a swine breed resulting from the cross of “Large white” sows with “Cinta senese” boars. The company Grigio del Casentino rears them in the semi-wild on the slopes of the National park of the Casentino forests in a wonderful valley, where they eat in a natural way and live outdoors in the fresh air.
