“Bastone del nonno” (grandpa’s cane) is a salami made from lean cuts of carefully selected Italian pigs. The meat comes exclusively from Italy and is finely minced, seasoned according to the traditional recipe and filled in non-edible casing. Once it has been filled, the salami looks like a cane used by old people to support them while they walk. That’s where it got its name “grandpa’s cane”. This salami was originally created to cater to the increasing demand for a lean salami without the cubes of fatback, usually added to the Tuscan salami. This is the spicy version of “grandpa’s cane”.
Scarpaccia cured meats is a family-run company from the Casentino area; they make handmade salami of extremely high quality. Each production step is manual: from cutting the meat, to tying the salami. Only prime-quality meat from Italy is used to make this genuine salami with an authentic taste. Moreover, this company is deeply rooted in traditions and still employs ancient working techniques which have been passed down from generation to generation.
