White figs are an ancient, and often forgotten, fruit variety. They have a thin and very bright skin and their flesh is delicate and juicy. They are sweet and scented; they’re an actual delicacy, but they are unfortunately hard to find and to store.
There is a solution, though. This jam lets you keep the unique flavour of these ancient fruits at your fingertips. Figs are cut in big chunks and the seeds are kept in, lending the jam a crunchy twist. This jam is ideal to make cakes and biscuits and it also pairs exceptionally well with Gorgonzola cheese and aged dry-cured ham, since it creates a nice contrast with the ham’s sapidity.
The Si.Gi. farm was born out of the passion of the couple Silvano Buccolini and Giuliana Papa for the forgotten fruits of their land which is located next to Macerata. After having started to grow ancient fruit varieties, Silvano and Giuliana opened a lab where they make the most typical jams and fruit preserves. These jars only contain genuine fruit, simple and natural processing methods, traditional tools and cooking methods - such as boiling in an uncovered pot - and, of course, the flavour of delicacies belonging to a bygone era.
