An oil for fine palates, with a fresh, penetrating and powerful herbaceous scent and dominant notes of artichoke, cardoon and green almond, embellished with floral nuances and hints of black cherry that create a bouquet of extreme complexity.

The flavour is deep, with a powerful and decisive bitter and spicy charge dominated by an excellent harmony, a great complexity of vegetable scents with a long persistence of soft aromatic notes.

Excellent when used raw on tuna and salmon tartares, legumes and vegetable soups, red meats or tasty fishes. Ideal also when combined with fresh cheeses, on ricotta cheese and spinach tortelli, rice or plain pasta with parmesan flakes. Amazing on cocoa and pistachio ice cream. Great if paired with sushi, with or without wasabi.
