“Il Cavallo Nero” (The black knight) cheese - 190 g

This cheese “runs away”, which is something we say to describe a cheese that, once it has matured, has an extremely soft and creamy paste, almost semi-liquid. That’s how this cheese got its name “Cavallo nero” (black knight) by Andrea De’ Magi: it is a three-milk cheese, made from cow, sheep and goat milk. Available in a 190g size, the black knight has a very thin grey rind, because it is covered with vegetable charcoal ash. The rind has the surface mould Penicilium candidum which sometimes makes it light grey.

This unique cheese, the result of great cheese-making skills, was created by Andrea De’ Magi, the cheese alchemist. A true cheese lover since birth, Andrea likes to combine his affineur skills to his desire to experiment: he mixes, tries and tries again new combinations and incredible flavours to create unique products. His cheeses, which are actual works of art, are individually handled with an almost obsessive love, as he himself defines it.

Although it may seem somewhat wild at first with its strong flavour full of aromas, the black knight is actually a very versatile cheese. The paste melts in the mouth and fills it with a sweet and persistent flavour. It looks amazing on a cheese platter, but it can also be used to prepare a fantastic creamy risotto.
