PGI balsamic vinegar of Modena - Margherita, aged 8 years, “4 corone” variety - 250ml Officinae Defrutum
This PGI balsamic vinegar of Modena ages for eight years in barrels in the Officinae Defrutum’s vinegar cellar, located in Magreta, in the province of Modena. The “4 corone” variety has a minimum density of 1.26 and a 6% acidity. The PGI balsamic vinegar of Modena does not contain added caramel colouring, as stated in its product specifications, but it is only made from cooked grape must and wine vinegar.
The 8-year aged PGI balsamic vinegar of Modena has a slightly creamy appearance and a deep brown colour. It has a perfectly balanced sweet and sour note which brings out the fruity flavour of cooked grape must.
The “4 corone” variety is ideal to dress cooked and grilled vegetables, salmon, pizza, meat, fresh and mature cheeses, as well as risotto.
