PDO San Daniele prosciutto is a dry-cured ham with a sweet flavour, but with a unique character and aromas. There aren’t many expert prosciutto-makers who manufacture San Daniele, due to the fact that this slow, but impeccable ham production is often run by families, just as Testa e Molinaro’s manufacture.
Pork legs are large in size and have a compact and tender meat; the perfect balance between lean and fat parts makes them delicious. Pigs are born, reared and slaughtered in the ten regions of Northern and Central Italy listed in the PDO specifications.
Testa e Molinaro created a selection of hams called “Trentalune” especially for those gourmet palates wishing to savour a truly exceptional San Daniele ham. This dry-cured ham is the result of a slow and long aging, which is essential to turn it into the excellent product that it is.
This ham is whole and boneless; it can be sliced by hand or by machine; this perfectly aged meat is ideal to fill gourmet sandwiches, prepare delicious starters as well as traditional recipes.
