The "Cinta Senese" pork ragout with Aglione garlic is a truly extraordinary sauce. Cinta Senese is an ancient and rustic swine breed that is characterised by a refined and flavourful meat thanks to the high content of intramuscular fat. To make this ragout, the meat is cooked very slowly on a mirepoix base, which allows obtaining an incredible taste and consistency. Red wine and tomato pulp are added and left to simmer. Finally, the Aglione garlic adds the final touch, making this sauce even more delicious.
The "Cinta Senese" ragout with Aglione garlic has an intense and enveloping taste. The hearty flavour of meat is perfectly balanced by fresh vegetables and Aglione garlic which lends its one-of-a-kind aroma to the dish. Tagliatelle, Pici, Lasagne – this ragout sauce can turn any dish into a feast.
Orto Fortunato is a farm located in Cortona, in the middle of the Valdichiana valley. The local specialty is – you’ve guessed it – Aglione garlic. This garlic variety is not only very big (it can weigh as much as 800g), but it is also more delicate than common garlic and doesn’t cause garlic breath. Orto Fortunato uses this delicacy to make truly exceptional sauces and ragouts.
