Wild Boar Ragout with Aglione Garlic – 220gr

Wild boar meat has a strong and intense flavour with a ‘gamey’ taste. The wild boar ragout with tomato and Aglione garlic by Orto Fortunato takes the best of this flavour and balances it out with fresh vegetables, tomato and red wine. Laurel, red hot chilli pepper, rosemary, sage and Aglione garlic from Valdichiana are also added to the sauce. The result is an absolutely perfect sauce that is hearty, enveloping and very flavourful.
The flavour is quite intense, but perfectly balanced. It must be paired with an equally solid pasta shape, such as Pappardelle or Pici that are thick and have a coarse texture. It also pairs well with Lasagne or baked pasta for a truly satisfying dish!
Orto Fortunato is a farm located in Cortona, in the middle of the Valdichiana valley. The local specialty is – you’ve guessed it – Aglione garlic. This garlic variety is not only very big (it can weigh as much as 800g), but it is also more delicate than common garlic and doesn’t cause garlic breath. Orto Fortunato uses this delicacy to make truly exceptional sauces and ragouts.
