On the palate it is consistent, slightly grainy, with a balanced taste and moderate flavour with a medium‑long persistence.
It is excellent to enjoy in cubes or slices on a platter, perhaps paired with a full-bodied red wine or a Sardinian white wine, such as the Vermentino. It can be grated on al dente pasta or used in appetizers with honey or jam to balance the intense taste.
