CasArrigoni makes PDO Taleggio cheese from raw milk supplied by small farms located in the Val Taleggio valley, in the upper Bergamo province in Lombardy, where this cheese is originally from.
This cheese traditional production is deeply tied to the territory. The milk is not pasteurised, which helps preserving all its unique sensory qualities obtained by letting the cows graze on pastures.
The raw-milk Taleggio cheese is a soft cheese with a creamy paste: the softer the paste, the sweeter the flavour. It is made from very fresh milk; it is salted by hand and aged in pinewood cases for at least two months.
This Italian traditional cheese is made here in its most authentic version.
