The aged golden rind pecorino cheese is Andrea De’ Magi’s king of pecorino cheeses. This memorable cheese is aged according to the most ancient Tuscan traditions for at least 150 days up to even 10 months. The cheese alchemist Andrea De’ Magi treats the rind of this pecorino with olive oil, both during and at the end of the refining period; thanks to the olive oil, the cheese acquires its golden colour, crowning it as king of pecorino cheeses. This product was patented and has since become the company’s flagship product.
