Aged Black Rind Pecorino Cheese - 350/700/1400g De' Magi
The black rind pecorino cheese ages for more than 120 days; due to the passing of time and optimal aging conditions, it acquires an intense flavour which is still delicate and sweet at the same time. It’s true, Andrea De’ Magi is a skilled cheese-affineur: he makes sure that his cheeses rest in the best possible conditions, paying close attention to the temperature and humidity rate. Since ancient times, caves have always been an ideal place to ripe cheeses; therefore Andrea De’ Magi has built two caves on its premises where he takes care of its excellent pecorino cheeses and lets them rest.
This pecorino cheese has a black rind - as stated by its name -, because while it ripens, its rind is treated with oil sediment, i.e. the olive oil residues. Curious by nature, Andrea De’ Magi likes to experiment and create new flavours - such as this combination -: that’s how he got his nickname “the cheese alchemist”. We can safely say that his cheeses are not only incredibly tasty, but also really unique.
This cheese has a vegetal aroma reminiscent of grass and dried fruit; that’s why it is ideal both as a starter and as a sweet note at the end of a meal. It goes very well with pears, bell pepper or onion jams and dried fruit.
