“Il Cardinale” (the Cardinal) is a cheese that really stands out, due to the purple colour of its crust treated with Alkermes liqueur. Just like “San Tino”, it’s part of the De’ Magi ‘s “spirit” cheese line, with their crust treated with alcohol, they’re funny and really beautiful to see as well as delicious to eat.

Il Cardinale is a cow and sheep’s milk cheese with a flat cylindrical shape. The crust - clearly edible - is very thin, with intense purple colour, while the inside is ivory coloured, soft and adhesive to the cut with sparse and irregular holes. The scent is floral, but also recalls the smell of cream, yogurt and yeast. The taste is sweet but intense, with a hint of acidity. In order to fully appreciate the eating qualities, we suggest to consume it at room temperature. On a platter or on a dessert plate, Il Cardinale will stand out from all the other cheeses, and not only chromatically!
