Greater amberjacks are precious fishes which should be handled carefully. Campisi knows how to properly pack all their deliciousness into a jar. Greater amberjack cured fish roe, also called bottarga - less famous than the mullet counterpart - is a Sicilian specialty with a genuine and natural flavour; it is ideal to prepare delicious pasta dishes.
Greater amberjack is processed in the Campisi workshop in a workmanlike manner and completely by hand. Filets are preserved in oil, whereas fish roe is selected, dried and grated and is ready to use. It is a perfect supply chain: fishes are caught by angling and processed by hand, only using the best parts, roe included.
The company Campisi is located in Marzamemi. Marzamemi is a village home to many historical tuna fish factories, whose livelihood is thus intertwined with the preservation of seafood products.
