The “Ulivastro” pecorino cheese by Andrea De’ Magi is inspired by the simple country life. To create this pecorino cheese with a very unique flavour, big old terracotta jars are used, which have been containing extra virgin olive oil for a long time, and that are now used to enhance the cheese’s sensory properties. The jar walls are covered in olive leaves and little branches and the jars are filled with pecorino cheese wheels. The pecorino is going to refine in the jars.

The “Ulivastro” pecorino is a perfect example of how the cheese alchemist, Andrea De’ Magi, works. Andrea combines his curiosity and his desire to experiment and try out new flavours with great skills and knowledge of cheese aging techniques. Aging is carried out in caves that he built himself, to guarantee optimal conditions for the refining of his cheeses.

This pecorino cheese combines two products belonging to the farming tradition: oil and cheese. The rind is thin and rough with olive leaves. It gives off an intense olive tree smell and has a well-balanced flavour which is at times astringent and bitter due to the leaves releasing their aromas on the cheese.
