Venison salami is an ancient delicacy coming from the most authentic traditions of the valleys of Trentino. The Corrà Brothers’ recipe is handed down from generation to generation and involves the use of lean meat from the front cuts of deer and fat bacon part from the pork, for an absolutely perfect balance of tastes and textures.

 

This salami is one of the Corrà Brothers’ top products and it’s part of the Roen Reserve, a series of cured meats produced in limited quantities and with longer maturing times, ancient techniques and recipes to preserve. The taste is intense, the aroma is unmistakable and you can perfectly feel all the venison’s pure and natural flavour. It should be tasted in thick slices, by itself or in a nice platter of deliciousness from Trentino.

 

The Corrà Brothers’ company was founded in 1850 in the Non Valley and it’s the oldest production of cured meats in Trentino. It’s a passion passed down from father to son – we’re at the fifth generation! – and the recipes are unchanged as well. From cold cuts to cheeses, from flours to jams, from traditional dishes of the territory to grappa, here everything speaks of tradition and authenticity.
