In Alto Adige there is only one proper way to eat the herbed pork tenderloin
: thin-sliced with cheese, bread and pickles on a cutting board. That’s the traditional afternoon snack
that they serve in the mountain cottages!
The Schmid’s herbed pork tenderloin is hand-made.
It is hand-coated with salt and a rigorous selection of Alpine aromatic herbs
which give it a delicate spiced flavour. Then it is slightly smoked with juniper berries and beech wood
and the last step of the process is maturing in the fresh air of the Alps.
The Schmid family creates its refined meat products - such as this fantastic fillet, with great care, beginning from a selection of high-quality ingredients and a total respect of the traditional family recipes that have been passing down through generations.
