“San Tino” (a play on the words “Vin Santo”) is one of the “spirit” cheeses – meaning with their crust treated with alcohol - designed and refined by Andrea Magi, the alchemist of the cheese. It is a cow and sheep’s milk cheese, repeatedly washed with Vin Santo wine and treated on the surface with Tuscan cantucci biscuits powder. The result is a cheese that is absolutely unusual, funny, spirited and beautiful to see, as well as delicious.

San Tino is the ideal cheese for dessert and much more. It has a perfect balance between sweetness and sapidity, balanced by a hint of acidity. The paste is soft and adhesive to the cut, with a straw yellow color, sparse and irregular holes, and a scent of dried fruit. In order to fully appreciate the eating qualities, San Tino cheese must be consumed at room temperature, as a dessert or inside a cheese plate.

Andrea Magi is a cheese affineur, a cheesemonger, a true alchemist. Cheese is his passion and his mission is to enhance the different tastes to create the perfect chemistry. To do so, he experiments with new seasonings using natural and traditional techniques, but also making use of modern technologies that allow him to comply with the highest standards of hygiene and always ensure the best quality.
