“La Pinetta” is a goat marbled cheese, winner of the gold medal at London’s 2017 and 2018 World Cheese Awards and winner of the Quality Award at 2013 and 2015 Infiniti Blu dairy competition, dedicated to marbled cheeses and Ombra della Madonnina’s national competition in 2018. La Pinetta is a very special cheese, that makes everyone fall in love with its initial elegant, refined, sweet, gentle, creamy and delicate taste, as well as its very remarkable flair and persistence.

It matures for at least 3 months in stone caves, with natural temperature and humidity. The crust is covered with a layer of natural mold, the paste is creamy, with an uneven marbling. The taste is sweet, slightly pungent and with a good persistence. It is a meditation kind of cheese, perfect in purity, but also exceptional as an aperitif or an appetizer, as well as great on risotto, filled with fresh pasta or sauces for main courses.

Andrea Magi is a cheese affineur, a cheesemonger, a true alchemist. Cheese is his passion and his mission is to enhance the different tastes to create the perfect chemistry. To do so, he experiments with new seasonings using natural and traditional techniques, but also making use of modern technologies that allow him to comply with the highest standards of hygiene and always ensure the best quality.
