Pasta is without any doubt the most renowned and exported Italian specialty worldwide. But that doesn’t mean that every pasta manufacturer can pride itself on providing high-quality products such as the pasta from Gragnano by “Pastificio dei Campi”. “Pastificio dei Campi” is located in Gragnano, whose mild and slightly humid climate made it an ideal place to produce pasta. The first evidence of this pasta dates back to at least the 16th century; by the 19th century, the pasta from Gragnano had already become worldwide famous. In 2009 the Gragnano pasta obtained the “Made in Italy 100%” certification: that means that the entire production process takes place in Italy. Each pasta package is equipped with a numerical traceability system which enables customers to check the place of origin of each raw material and ensures utmost transparency.

“Pastificio dei Campi” defines itself as a “modern interpreter of a century-old tradition”. Unlike the rest of the pasta manufacturing sector - which is excessively industrialised - this company handcrafts pasta following traditional manufacturing methods. In 2013 the pasta from Gragnano obtained the PGI certification mark, whose aim is, amongst other, to protect and cement these traditional rituals. Beside indicating the place of origin, product specifications also state that this pasta must be made exclusively from durum-wheat semolina and local water, that it must be extruded through bronze dies, that it must dry at set temperatures for 6 to 60 hours and that packaging must occur within 24 hours, exclusively using cases made of cardboard or plant or recyclable materials. These strict rules ensure an absolute and unparalleled quality.

The real treasure of this company lies in its wheat. Before starting to produce pasta, the company carried out a large-scale soil revitalisation in its fields in Apulia, working with local farmers, banishing chemical fertilisers and selecting only the most ancient wheat varieties. Crop rotation - employed to prevent soil impoverishment - brought about major improvements in the quality of raw materials, although it meant reducing yield. Another treasure of “Pastificio dei Campi” lies without any doubt in its employees who largely contributed to the success of the company’s products.
